Collagen is a protein molecule or protein that forms fibers, the collagen fibers. These are found in all animals. They are secreted by connective tissue cells such as fibroblasts. It is the most abundant component of skin and bones.

The amino acid composition of collagen is quite particular. Glycine represents, in moles, approximately one third of the amino acids present. They also contain very high amounts of proline, and hydroxyproline (up to 10%), and it is one of the few proteins that contains hydroxylysine.

The presence of hydroxyproline is often used as an analytical criterion to assess the amount of collagen (connective tissue) present in minced meat products. Both hydroxylysine and hydroxyproline are produced after the synthesis of the polypeptide chain, by modification of the non-hydroxylated amino acids by specific enzymes. Collagen fibers are flexible, but offer great tensile strength.

Collagen is responsible for forming the entire structure of the tissues of the skin, bones and joints. Collagen is the most abundant and important structural protein in the human body, so much so that it constitutes 70% of the dry volume of human skin. It is a very flexible structure.
